When the leaves start to fall, the air cools to a crisp temperature and flip flops start to be out the question...I start craving soups, stews and hearty meals! My all time favorite is Brunswick Stew. My Granny Kuykendall used to make homemade Brunswick stew...but as I have previously stated...us Jean gals don't roll that way. We like simple, quick and delicious! It's made in our home, so I guess it could be considered as "homemade". :) So, here on Recipe Thursday, I give you..."Brunswick Stew"...the Jean gal's way!
Brunswick Stew
1 lb. of ground beef, browned
1 small onion chopped
2 - 16 oz. cans of cream style corn
2 - 10 oz. cans of BBQ pork
2 - 10 oz. cans of white chicken chunks (drained)
1 - 28 oz. can of crushed tomatoes
1 - 10 oz. can of diced tomatoes with green chilies
1 cup of ketchup
Brown hamburger meat and onion together in skillet and drain well.
Place in 5 quart dutch oven (or crock pot). Stir in remaining ingredients. Blend well. Add water to make stew thinner, if you like a more "soupy" texture. Cover and cook over "VERY" low heat for 45 minutes until flavors are blended and heated thoroughly. Stir very often, because it scorches very easily.
Mom gave me this recipe and I was a little leery, but one bite was all it took! Literally, one bite is all it will take to bring you guys over to my and Whit's way of thinking! This soup/stew is divine!!! I like my Brunswick stew a little thinner than some people do, so just add water or not! It's totally up to you! I like to add crushed red pepper to my bowl of Brunswick Stew, Whit likes to eat hers on bread, like a sandwich, Dudu like to line her bowl with bread and put her stew on top, Colby likes to put his in the freezer until it's cool (he's a wuss...lol)....NO MATTER how you eat it...YOU WILL LIKE IT TOO!!

ReplyDeleteOh my lands...Brunswick Stew is one of my fall/winter favorites. It dates back to Dad's political years, where they would have big pots of homemade brunswick stew at all the rallies and campaign stages. I think it was like the VFW post or some group of men who always had it and you could buy it in quart jars to take home, too.
ReplyDeleteAnd I've NEVER cooked it, because it was always presented to me (of course I was like 10 at the time and food network had not evolved) that it was a lengthy, difficult, process. But I MUST try this ASAP. And maybe I'll let my Daddy try a little! :)
