Recipe Thursday!!

What is a sure fire way to get your kids to eat broccoli? Just put a little cheese on it! I love broccoli and cheese!! I have eaten several broccoli and cheese casseroles that have rice in them, but I really don't like the rice...I know, I'm a weirdo, but I would just rather have it without the rice. So when a very dear friend (and I DO mean, V-E-R-Y D-E-A-R F-R-I-E-N-D) brought some of her famous broccoli and cheese casserole to work...I fell in love!!! Thank you Pam for sharing this recipe with me...and once again, it's quick and easy...and oh so cheesy! :)








Broccoli Casserole




1 2 lb. bag of chopped broccoli (I used the florets and a little more than 2 lbs.)
1 block of Velveeta cheese (16 oz) ( I used the largest block)
1 can of Cream of Mushroom (I used the Family Size can)
1 stick of butter
½ - ¾ cup of milk
1-2 sleeves of Ritz crackers

Boil broccoli. Mix cheese, Cream of Mushroom, butter, and milk and melt slowly until all is mixed well. Then pour over the broccoli.

Top with crushed Ritz crackers. Pats of butter on top. ( I melt 1 stick and pour over top)

Bake at 375 degrees for about 30 minutes or until golden on top.
